Homemade Chicken Pot Pie Recipe | A Comforting One-Dish Meal with Tender Chicken and Flaky Crust

1 lb cooked chicken (diced)
1 cup carrots (diced)
1 cup peas
1 cup celery (diced)
1 small onion (diced)
1 cup chicken broth
1 ½ cups heavy cream
1 tsp garlic powder
1 tsp dried thyme
Salt and pepper to taste
1 package refrigerated pie crusts (or homemade crust if preferred)
2 tbsp butter
2 tbsp all-purpose flour
➡ Instructions:
1. Preheat your oven to 425°F (220°C).
2. In a large skillet, melt butter over medium heat. Add onions, carrots, celery, and peas. Cook for 5-7 minutes, until the vegetables are softened.
3. Stir in flour and cook for another minute to form a roux.
4. Slowly add chicken broth and heavy cream, stirring constantly until the mixture thickens.
5. Stir in the cooked chicken, garlic powder, thyme, salt, and pepper. Simmer for 5 minutes.
6. Roll out the pie crust and fit it into a 9-inch pie pan. Pour the chicken mixture into the pie crust.
7. Place the second pie crust on top and crimp the edges to seal. Cut a few slits in the top to allow steam to escape.
8. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
