Garden Vegetable Skillet Hash Recipe.

➡ Ingredients:

4 medium potatoes, diced (skin on for rustic flavor)

1 large onion, chopped

1 bell pepper, diced (any color)

2 cups fresh spinach or kale

1 cup cherry tomatoes, halved

4 farm-fresh eggs

Olive oil or bacon grease (for frying)

Salt, pepper, and smoked paprika (to taste)


➡ Instructions:

1. Heat oil in a large skillet over medium heat. Add potatoes and cook until crispy and golden, about 15-20 minutes.


2. Stir in onions and bell peppers, cooking until softened.


3. Add spinach/kale and cherry tomatoes, cooking until wilted.


4. Make four wells in the mixture and crack an egg into each. Cover and cook until eggs reach desired doneness.
