2 lbs beef stew meat (cubed)
4 cups beef broth
4 carrots (sliced)
4 potatoes (diced)
1 onion (diced)
3 cloves garlic (minced)
2 tbsp tomato paste
1 tsp dried thyme
2 tbsp flour
Salt and pepper to taste
➡ Instructions:
1. In a large pot or Dutch oven, brown the beef stew meat in batches. Remove and set aside.
2. In the same pot, sauté onion and garlic until softened. Add tomato paste and cook for another minute.
3. Sprinkle the flour over the vegetables and stir to coat. Add beef broth slowly, stirring to combine.
4. Return the beef to the pot, along with carrots, potatoes, thyme, salt, and pepper. Bring to a boil.
5. Reduce heat, cover, and simmer for 2-3 hours, until beef is tender and the stew has thickened.
